Servings: 4-6 Prep time: 5min Cooking time: ~60min
Ingredients:
- 12 eggs
- 1-3 cups pumpkin, diced
- 1 cup spinach
- 1/4 cup grated cheese
- Spring onion, chopped
- 2 tbsp flour or almond meal
- Parsley, coriander, dill, rosemary, or herbs of choice!
- Salt, pepper and garlic, to taste
- 1 tbsp butter or oil, for greasing
- Optional: feta, 2 tbsp greek yoghurt
- Serving suggestions: Mashed potato, rice, side salad, fries,
Method:
- Preheat air fryer to 200°C. Add pumpkin, spray with oil, toss with salt, then air fry for 15-20 minutes
- Preheat oven to 180°C
- Combine all ingredients in a bowl, adding cooked pumpkin last. Pour mixture into a greased baking tin
- Bake for 35-40 minutes
- Serve as desired
- Enjoy!
