Pumpkin Frittata

Servings: 4-6        Prep time: 5min       Cooking time: ~60min

Ingredients:

  • 12 eggs
  • 1-3 cups pumpkin, diced
  • 1 cup spinach
  • 1/4 cup grated cheese
  • Spring onion, chopped
  • 2 tbsp flour or almond meal
  • Parsley, coriander, dill, rosemary, or herbs of choice!
  • Salt, pepper and garlic, to taste
  • 1 tbsp butter or oil, for greasing
  • Optional: feta, 2 tbsp greek yoghurt
  • Serving suggestions: Mashed potato, rice, side salad, fries,

Method:

  1. Preheat air fryer to 200°C. Add pumpkin, spray with oil, toss with salt, then air fry for 15-20 minutes
  2. Preheat oven to 180°C
  3. Combine all ingredients in a bowl, adding cooked pumpkin last. Pour mixture into a greased baking tin
  4. Bake for 35-40 minutes
  5. Serve as desired
  6. Enjoy!
