Salmon Veg Foil Packets

Servings: 2 Prep time: 5min Cooking time: 20min
Ingredients:
- 2 Salmon fillets, ~150g each
- 2 tbsp extra virgin olive oil
- 2 tsp butter, melted
- Salt and pepper
- 2-8 garlic cloves, crushed
- 1 zucchini, halved and sliced
- 1 large tomato, halved & sliced
- Spring Onion, thyme and parsley
- 1 tsp sweet paprika
- 1 large lemon
Method:
- Preheat air fryer or oven to 200°C.
- Lay out 2 foil sheets (two lots of 12"x17") on a large baking tray or in the air fryer
- Rub olive oil over each salmon fillet, then place them oiled side down on the foil sheets.
- Sprinkle salt, pepper, herbs, and half the crushed garlic over the salmon fillets.
- In a large bowl, mix the remaining garlic with melted butter, lemon juice, salt, pepper & paprika, then toss through the veggies.
- Divide the vegetables into 2 portions over the salmon fillets. Fold the foil over the salmon and veggies, cover completely and fold to seal shut.
- Bake in the oven or air fryer for 20-25 min.
- When ready, transfer the salmon & veggies from foil to plates. Serve with optional brown rice. Enjoy!
