Ingredients:
- 600g mince (beef, kangaroo or plant-based)
- ½ medium onion, chopped
- 5 large garlic cloves, minced
- 1 medium carrot, shredded
- 1 medium zucchini, shredded
- 1 tablespoon olive oil
- Salt and Pepper to taste
MASH TOPPING:
- 2 small cauliflower heads, chopped finely
- 2 potatoes, peeled and diced
- Salt and pepper
- Milk, as needed (cow, soy, almond, dairy, etc.)
Method:
- Sauté onion and garlic in olive oil until tender. Add carrot and zucchini. Cook until they soften.
- Add the mince, salt, pepper, and garlic. Cook until the mince browns and all of the moisture begins to dry out.
- Meanwhile, prepare the mash topping: Boil potato and cauliflower in water (as needed) until soft, and the water has evaporated. Mix through garlic, salt, and milk (as needed). Mash
- To assemble the pie, distribute the mince evenly in an 8-inch baking dish. Spread mash on top, then bake at 180°C for 25 min.
- Serve with optional side salad, peas, or more roast veg.
