Shepherd's Pie

Ingredients:

  • 600g mince (beef, kangaroo or plant-based)
  • ½ medium onion, chopped
  • 5 large garlic cloves, minced
  • 1 medium carrot, shredded
  • 1 medium zucchini, shredded
  • 1 tablespoon olive oil
  • Salt and Pepper to taste

MASH TOPPING:
  • 2 small cauliflower heads, chopped finely
  • 2 potatoes, peeled and diced
  • Salt and pepper
  • Milk, as needed (cow, soy, almond, dairy, etc.)

Method:

  1. Sauté onion and garlic in olive oil until tender. Add carrot and zucchini. Cook until they soften.
  2. Add the mince, salt, pepper, and garlic. Cook until the mince browns and all of the moisture begins to dry out.
  3. Meanwhile, prepare the mash topping: Boil potato and cauliflower in water (as needed) until soft, and the water has evaporated. Mix through garlic, salt, and milk (as needed). Mash
  4. To assemble the pie, distribute the mince evenly in an 8-inch baking dish. Spread mash on top, then bake at 180°C for 25 min.
  5. Serve with optional side salad, peas, or more roast veg.
